Here's a great summer dish to keep that body nice and slim. Plus it tastes yummy!!
Vegan caesar salad with caramelized onions, tempeh bacon bits, croutons, and home made caesar salad dressing.
CARAMELIZED ONIONS
1 onion sliced thinly
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
TEMPEH BACON BITS
1 block of tempeh
2 tablespoons maple syrup
2 tablespoons tamari or soy sauce
1/2 teaspoon sriracha
1/4 teaspoon liquid smoke
Crumble the tempeh blocks in to small pieces.
Marinate tempeh in remaining ingredients for at least 15 minutes.
Bake on parchment paper at 400 degrees for 25 minutes, flipping half way.
HERBIVEROUS CROUTONS
4 slices of bread cut into 1 inch cubes
1/2 tablespoon thyme
1/2 tablespoon rosemary
1/2 tablespoon oregano
1/2 teaspoon salt
Mix all ingredients in a baking sheet
Bake at 400 degrees for 15 minutes, flipping half way
CAESAR SALAD DRESSING
1 cup soaked or boiled unsalted and unroasted cashews
1 cup unsweetened alternative milk
3 tablespoons nutritional yeast
1 teaspoon Dijon mustard
4 garlic cloves minced
2 tablespoons lemon juice
1/2 teaspoon salt
1/2 teaspoon pepper
1-2 tablespoons drained capers
Blend all ingredients in a high speed blender.
